One of my favorite dishes but is a hard one to find. It is Fish Tacos, Yummo! I beer battered the fish (cod), heated fresh CORN (not flour) tacos, shredded cabbage, red onion, salsa, avocado, white sauce (equal parts mayo & sour cream)

If you like it out make it home
I am a strong believer that if you like a dish when you go out you can make it at home for less money and usually healthier. If you check my earlier post I took a picture of a dish that looked liked this one from a place in Florida. This was a white wine sauce with garlic, jumbo shrimp, and butternut squash. It came out real good but still seemed to be missing something, not quite there yet. Try try again. I need to add cilantro, toasted pine nuts and top with parsley.
Easter
OK so I am a kid at heart and made and painted some eggs but the feature was a leg of lamb. I always find leg of lamb a little gamy and lacks flavor once you go past the outer crust. I decided to try something a little different this time. I removed the bone, opened up the lamb completely and covered the inside with my spices (rosemary,crushed mint, garlic, salt & pepper, olive oil). I loved the way this came out, as you can see from the pictures it's filled with spices and herbs.

Boston Creme Pancakes
OK so with some company here I went the extra mile for breakfast this morning. If you have a sweet tooth this is a hit. I made fresh custard, then filled pancakes, I injected the custard into the pancakes. I melted some semi sweet Chocolate and swirled the filled Pancakes for the top sprinkled a little powdered sugar. The custard was prepared about 1-2 hrs before I made the pancakes.

Great Dish to try!!
I am not sure if you use a crock pot or not but I am a big fan of slow cooking. I recently came across a recipe that turned out to be one of my best dishes I have made in some time! I thought I would share. I will be making this again this week and will take pictures then.
Braised Short Ribs
2 tbs mustard and coarse ground pepper
2 tsp salt
5 lbs of bone in short ribs ( I did 6 ribs from the butcher and I was short, I would do about 7-8 for three people)
3 tbs veg oil
1 mini bottle of bourbon
2 large yellow onions diced
2 big carrots peeled and diced
5 garlic cloves peeled and diced
2 tbs beef demi -glace
3 tbs honey
3 cups of beef stock ( I use a low sodium)
2 tbs red wine vinegar
1 tbs chopped fresh parsley
In a small bowl combine, combine mustard, pepper and salt. Rub/brush onto short ribs. Brown ribs in slow cooker if you can or a pan. Remove ribs, add bourbon, stir and simmer about 1 minute while deglazing pan, add 1tbs oil and onions; cook about 7 minutes. Add carrots and garlic cook another 7 minutes (careful not to burn). Add demi-glace, honey, stock, and vinegar; bring to a simmer. Add ribs if done in the slow cooker or put the ribs in the slow cooker and pour over them. Cook on high heat 6 hrs. Transfer ribs to a platter carefully, use a stick blender and puree sauce and vegetables, let this simmer about 10 minutes in the slow cooker. Pour over ribs, garnish with parsley and enjoy. Serve with rice, pasta,mashed. This recipe feeds 3 as is if you are medium eaters, I would do the larger portion if you have any heavy eaters but don't forget to increase the the recipe measurements if you do. Enjoy this is sure to please.
